There are hundreds of books on various aspects of the process, but I've yet to discover a really good, concise management guide to the whole integrated process (which is why I generated one - see Useful publications). The following sites contain a mass of information on either product development or topics closely related.
  Product development
  Engineering - general
  Manufacturing

Product development
The Product Development and Management Association
Useful web site containing large reference list of books on product development, most on very specific aspects.
the Time to Market Group
A UK consultancy working on product development, lead time reduction and so on. A number of related articles in their "download" section.
  The Product Development Forum
Sponsored by DRM Associates (a consultancy), a source of information on product development based on current best practices. Contains more than 100 pages of articles on product development.
John Stark Associates
SRI Consulting

Management consultancies specialising in improving their clients' product development process. Contains a number of articles and book references on aspects of the process.
Bob Barker's web site
Bob Barker's research page. Interesting information on time to market aspects and published papers on the subject.

Engineering - general
Eureka magazine
Published by Findlay Publishing. Contains a host of useful design and development data.
Design Selector Global
Also from Findlays Publishing, a comprehensive index to selecting materials and components.

Manufacturing
If you're not familiar with this area, the following disseminate knowledge on world best practice in manufacturing. This is good background to understanding the relationship with product development.
the Association for Manufacturing Excellence
This site is run by the US Association for Manufacturing Excellence (AME), that runs programmes for its members to help their companies implement the best currnet manufacturing practice.
the High Performance Manufacturing Consortium
Similar aims to AME above.
Kaizen Institute
Founded in 1985 by Masaaki Imai, a global management consultancy that helps companies "implement improvement tools and strategies". Contains a list of reading materials.

The Lean Enterprise Institute
Instigated by the authors of The Machine that Changed the World and Lean Thinking, the site aims at helping companies to implement the best current manufacturing practice, based on zero stock practice.
Productivity Incorporated
Very useful website. Productivity Press has the rights to publish many of the books on production by Japanese authorities such as Shigeo Shingo. Books such as A study of the Toyota Production System and Non Stock Production are classics. No chief executive can afford not to have read, understood and put them into practice. A few but not many books on product development.
see also American Technical Publishers web site.
Resources for Innovative Manufacturing Excellence
Interesting website of manufacturing data and links.
TBM Consulting Group
Good data source on implementing the Toyota Production System. The site contains a number of useful articles.
